  • 4 flour tortillas
  • 1 ripe avocado - peeled, stone removed and sliced
  • 4 tablespoons soured cream
  • 4 tablespoons salsa

  1. Heat oil in a large frying pan on medium high heat. Sauté onion and garlic for 5 minutes. Stir in chilli powder and cumin, and cook 1 minute. Stir in tomato, kidney beans and salt. Bring to the boil, then reduce heat and simmer for 20 minutes.
  2. Stir in spinach and cook 5 minutes more. Spoon 1/4 of the bean mixture into the middle of a warm tortilla. Wrap and garnish with avocado, soured cream and salsa.

Made it more kid friendly.This is great! I did make a few modifications. I used black beans instead of kidney beans, added some chopped black olives, added a couple of tablespoons of corn meal as a thickener, decreased the chilli powder by about a third to make it more kid friendly, and served it in some of those specialty tomato basil burritos, with some cheddar, soured cream, and taco sauce. Used different ingredients.The whole family loved this recipe! I substituted the black beans for kidney as suggested. It was an enjoyable and fairly simple recipe to make. Then I served the burrito mixture in a pot, and put out all the toppings so people could customise their own burritos. I made a little extra and reheated for lunches throughout the week. Warm 3 Bean Salad

I'm going for convenience and taste, for my latest budget recipe -- that brings canned legumes front and center.

It's time to brush away the cobwebs and dust off those tins of beans in the back of the cupboard, and do something with them. Might I suggest a delicious Warm 3 Bean Salad with sauteed onion and tomato, and flavored with tangy vinegar plus luscious olive oil? I think you will be impressed with this simple, quick and satisfying side dish.

You can cook with any favorite beans you have on hand just drain them and do a quick rinse while you are sauteing some chopped onion and tomato. You can try combinations of black-eyed peas, green beans, black beans, Navy beans, or pinto-- they will meld, but still retain their unique tastes.

I always find cheap cans at the local 99c only Store, and even my chain grocery store carries some for around a dollar or less per can. And, ethnic markets have their own legume specialties on the cheap.

Now, I know canned doesn't compare in flavor, or variety of preparation, to slow cooked dried, or fresh shelled -- but I'm trying to give you working stiffs, with too much overtime on the clock, a break, here.

So give my Warm 3 Bean Salad a try. With all the time you save, you can start another load of laundry, or go visit your friends on Facebook!

  • 3 cans of beans (about 15 ounce, each can) - you favorite. I used Red Kidney Bean, Northern Bean (White, Navy or Cannellini,) and Chickpea (Garbonzo.)
  • 1 large tomato - chopped.
  • 1 medium onion - any type, including white, yellow or green onion. I used a red onion.
  • 1 tablespoon of vinegar - I used rice vinegar, but you can use any on hand, including: cider, balsamic or white.
  • 3 tablespoons of oil - one for sauteing, and another at the end, for flavoring.
  • Handful of chopped herbs - optional
  • Salt and pepper to taste.

Open and drain 3 cans of beans. Add all the beans to a strainer and rinse off the rest of the bean sauce. Set aside and allow to finish draining.

In a large pan or pan, over medium heat, add oil and saute onion until soft, about 2-3 minutes. It's just enough time to take out the hot raw taste and introduce some sweet caramelization.

Next add all the beans and chopped tomato. Drizzle on a tablespoon of olive oil (or a favorite tasty oil,) and blend ingredients well. Cook until heated through, about 3 minutes. Finish by mixing in a handful of your favorite chopped herb.

I have been making these for years. So healthy too. I love these burritos. I don't make any changes to the recipe, which says a lot about this recipe.

Great recipe! I added a few small pieces of chicken, an entire jalapeño, and substituted the stewed tomatoes with some salsa. My husband really liked it. The only downside to this recipe is that it takes a lot of prep work and isn’t very spicy. But I will make it again and probably double the recipe, thank you!

Definitely a good recipe! Tried this out tonight both me and my father loved it. One thing though the cumin and onion smell made the house smell like stinky socks lol. Definitly would recommend to anyone who likes a good burrito. TIP: Turn the tortilla's over halfway through the warming process to stop the bottom from getting too crunchy. :)

I've been making this for years. I use 1 tsp cumin, 1 tsp chili powder, a whole can of diced tomato (undrained), and omit the carrot. The best part is, make little burrito packages, close with toothpicks, spray with oil, and bake at 400 for 20 min, turning once. Crispy and delicious.

This recipe is a winner. Like others, I added zucchini, used two cans of beans and upped the ante on the cumin and chili powder. Delicious. The additions make it possible for me to use the filling for taco salads tomorrow. I made guacamole as well to add to burrito. With all of the flavors, my husband was unaware that there was no meat included in the recipe. This is a winner.

So good!! I just made this and will make this again. I followed the recipe mostly as written, just some proportions were off because I used two whole cans of beans and one whole can of the stewed tomatoes but it was still delicious! I topped with avocado, cilantro, sour cream, black olives, cheese and lettuce. I can't wait to eat leftovers tomorrow!!

I substituted sour cream with partially drained yogurt. Excellent!!

A great meatless entree. I added a medium shredded zucchini and doubled the beans. For finicky my kids, I had to reluctantly cut down on the spices--only 1/2 of the chili powder and no added jalepeno. For the tomatoes, I used Muir Glen's diced tomatoes with medium chiles. I even made it ahead by a few hours and let the simmering take place in crock pot, on the warm setting which worked well for our busy night.

A lovely blend of flavors. We skip the sour cream. A great meal for your vegetarian friends.

I've been using this recipe for at least 6 years. My family loves it! I do them up like a quesadilla instead of a burrito by grilling them once filled. It adds a great flavor and crispness too.

I thought that this was a very good, relatively healthy weeknight meal. My boyfriend likes meat, so I made a concession by adding brined, grilled chicken to the burritos. I would have liked them just fine without it, though. As a matter of fact, I picked half of mine out and gave it to him. I ended up using a whole jalepeno because like some other people, I wanted more spice. Jalepenos differ in intensity from pepper to pepper, though, so I would suggest tasting as you go. I also added some corriander and some extra cumin because I thought it was missing a little something. I used some "Spanish-style tomato sauce," but I rather like some other people's idea of using salsa. I would only use high-quality, preferably fresh salsa, though. I agree with other people that it is absolutely essential to make the burritos and out them in the oven until they're browned. This recipe will probably be added to our regular rotation.

We have been using this recipe for 5 or 6 years now. We love it. I try to make meatless meals about twice a week and this is a standard for those nights. I make it at least every other week. I use salsa instead of the mexican style tomatoes and I add some diced zucchini also.

Wow--I was shocked! I'm a huge meat lover and took my wife's challenge of eating no meat for the day, so I made these burritos for dinner. Simply amazing. Easy, delicious, fillling (okay, I had two). I used fresh sweet corn from the farmers market instead of frozen and it really added to the entire flavor experience. Highly recommended.

Perfection! So easy too, you basically just have to chop an onion and a pepper and stir things together. This turned out way better than I had hoped.

I didn't have onions or carrots and this dish still turned out very good. Next time Iɽ add more jalapeno pepper to turn up the heat. I find low fat sour cream to taste a bit artificial at times, so I used 2% firm yogurt (usually a greek brand) instead of sour cream, it has a very similar taste with a lot less of the fat.

As other reviewers note, this is a great base recipe that you can modify with whatever veggies are on hand. (I would never leave out the carrots, but that's just me.) It's great in burritos, over rice, and as I found out last night, as the filling for Moosewood's black bean chilaquiles recipe. I think it's especially tasty topped with salsa verde or jalapeno sauce.

I normally don't take the time to write reviews. I only write this so that no one will miss out on this recipe. I have made this so many times. Even my carnivorous husband requested it for his b-day, when I would have made him any meat dish in the world. ( I am vegetarian) I add baby spinach, Desert Pepper Black Bean Salsa, and I serve it with saffron rice. This is always on rotation in my house. I couldn't imagine anyone being disappointed. (but please top it with a salsa that you love, then add cheese, then bake just to melt cheese.

I probably make this almost weekly! My kids love it, everyone we have ever offered it to, loves it!

this is a good super fast dish. I skipped the corn as my husband is watching his carbs and used one can of black beans and one can of black beans in a sowthwest sauce one time, carribian sauce another time (S&W has several different kinds.) I think the flvored sauce in the beans makes the dish a bit more gooee and by using different sauces you can vary the flavor a little. A great dinner when nothing is defrosted or on a hot day!

Easy Vegan Chilli Mince Bean Wraps

What can I say? These easy chilli bean mince wraps are well tested in our house and I mean well tested We've been eating them for years and they are Cooper's favourite dinner. When I asked him what he would like for dinner yesterday, of course he said chilli wraps and how could I refuse him?

I usually make a big pot as everyone loves them and always want them a second night too. I usually make enough chilli for two nights then enough leftover to pop in the freezer for another meal, but sometimes I just want to make enough for what we need.

This batch makes enough for 4-6 tasty wraps, depending how deep you fill them. Graham and I like wraps really well filled, but Cooper prefers then a bit thinner and to be honest if I fill his a bit more modestly there is less chance of him getting in a total mess eating them.

Homemade Starbucks Spinach Feta Wrap Recipe

I have a yummy breakfast recipe to share with you guys today. It’s inspired by my favorite breakfast wrap from Starbucks and is really easy to make… Just like nearly every recipe I share on this blog. Simple recipes are the way to go!

This recipe requires a small handful of ingredients that you can easily find at your local grocery store.

I tried to make sure to combine all of the important flavors from my favorite wrap to get as close to the real deal as possible. Fresh spinach, crumbled feta cheese and sundried tomatoes add a serious punch of flavor to the wrap!

After checking out the ingredient list on Starbucks’ website to see what is used to make the original wrap, I saw that sundried tomato cream cheese was used, but since I could not find that at my grocery store, I used a wedge of The Laughing Cow Creamy Mozzarella Sun-Dried Tomato & Basil cheese instead.

You can easily substitute veggie or sun-dried tomato cream cheese if you have it on hand though! Just don’t skip this step because it definitely adds to the flavor of the wrap!

Quinoa Veggie Wrap

A veggie wrap is the epitome of flavor + convenience. These pesto & quinoa salad-stuffed veggie wraps are bright, fresh & perfect for taking on the go.

In my opinion, the world cannot have too many quinoa salads. Don’t get me wrong, I love the other grains too – farro, millet, and wheatberries are all lovely – but my real go-to grain is quinoa. I love to make a big batch and keep it on hand, as it’s the perfect catch-all for the vegetables, nuts, and cheeses that I usually have around. Of course, since this salad was destined for a picnic without any silverware, I decided to have my cake (salad?) and eat it too by stuffing it in a veggie wrap.

My Veggie Wrap Filling

The hearty, fresh quinoa salad filling includes so many of my favorite things – crunchy cucumbers, sweet cherry tomatoes, herbs, bits of kale, and a sprinkling of crumbled feta cheese.

I also add a good slather of kale pesto for creaminess and a few pickled onions for pop. Together, the ingredients make a tangy, bright, and satisfying filling that has the perfect blend of contrasting textures and flavors.

Veggie Wrap Recipe Variations

Because the ingredient list for this recipe is a bit long, I wanted to share my secret for quick, healthy meals: I prep a few interesting components one day each week and keep them on hand to transform into different dishes. In this case, I used the cooked quinoa, pickled onions, and extra pesto I had in the fridge. You may have hummus, nuts, herbs, whatever. Keep these sorts of things around, and you’ll always be ready for a delicious meal.

When I have different ingredients in the fridge, I might change up this veggie wrap with one of these variations:

  • Swap the spread. Use another type of pesto, or try the lemony white bean spread from this recipe. Of course, hummus would be good too.
  • Vary the veggies. I might use sliced roasted red peppers instead of the tomatoes, swap spinach for the kale, or add a few crisp radishes. And avocado would give it a delicious creamy bite!
  • Try another nut. Pine nuts are great, but if you have almonds, walnuts, or pepitas in your pantry, try them in this recipe!
  • Switch the salad. In this case, I used a yummy quinoa salad as my filling, but if I have tabbouleh or kale salad in the fridge, I’ll often stuff them into a wrap on day 2.
