I prepared a light dish of spinach with sour cream with scrambled eggs, fully flavored with garlic and dill. And of course thickened with chickpea flour, which I like very much and is very healthy through the intake of protein, calcium, magnesium, selenium and others.

  • 500 gr fresh spinach
  • 1 onion
  • 2 tablespoons oil
  • 1 tablespoon chickpea flour
  • salt
  • ground black pepper
  • 150 gr sour cream
  • 1 link green dill
  • 3 cloves of garlic

RECIPE PREPARATION Spinach dish with sour cream:

We clean the spinach leaves and wash them well in several waters, then drain them. We put a little 2 cups of water in a saucepan on the fire and when it boils we add a little salt and spinach, which we let it boil for a while, to soften, then we drain it, keeping the water. Put the drained and cooled spinach on a mincer and grind it well with a knife. Finely chop the onion and put it in hot oil. When the onion has softened, add the spinach. Stir continuously in the spinach with a wooden spoon, pressing it from the bottom of the pan until it softens well. Add the chickpea flour, mix well, then quench with the spinach juice off. Add salt and pepper to taste and simmer until thickened. Add the finely chopped dill, sour cream and bring to a boil. Turn off the heat and add the garlic. Serve the spinach either plain or with scrambled eggs or as a garnish for grilled steak.

Florentine turkey breast

  • 500g turkey breast
  • 1 link green garlic
  • 200g spinach
  • 200ml cream (Covalact 25%)
  • 30g butter
  • Olive oil
  • 2 teaspoons starch
  • 1 teaspoon nutmeg
  • 50ml milk
  • 50g parmesan
  • Coarse salt, freshly ground pepper

To be honest, I don't think Italians eat that. Rather, it is called Florentine (meaning from Florence) because it also has spinach, but that's about it. It sounds more like an American recipe and if you search for Creamy Florentine Chicken, you will only find American sites. But let's imagine we taste some Italian in the pan.

Cut the meat into cubes and fry in olive oil. Add salt and pepper to taste and simmer for about 10 minutes, turning to take them on all sides. If there is no room, you do it in installments, the idea is to burn on all sides and not to boil. Remove the meat to a plate.

Finely chop the garlic, put it to harden with butter, in the pan from which you removed the meat, for about 3 minutes. Add the cream, nutmeg, add salt and pepper and mix everything. Leave for about 5 minutes.

Add the meat to the sauce, add the chopped spinach leaves. Put the lid on the pan and leave for 2-3 minutes.

Mix the starch with the milk. Pour into the saucepan, add the Parmesan cheese, mix everything and turn off the heat.

Serve immediately, with grated parsley on top. It goes with rice with lemon sauce and a cold white wine, Scaia Garganega Chardonnay 2019.

Ingredients for 4 servings of spinach with sour cream:

- 1 kg of spinach
- 6 tablespoons oil
- 100 gr of rice
- an onion
- 150 ml sour cream
- a dill tie
- 2 cloves of garlic
- salt
- pepper
- Vegeta

Step 1:
Boil the spinach for about 20 minutes, strain it through a strainer and chop finely.

Step 2:
Finely chop the onion and cook in 4 tablespoons of oil. Top with rice and vegeta. Leave it for a while until the rice hardens a bit and add water. Leave on low heat until boiling, taking care not to stick.

Step 3
Put 2 tablespoons of oil in a larger saucepan and cook the spinach. Put the crushed garlic on top and mix. When the rice is tender, place it over the spinach and mix well.

Step 4
The food is seasoned with salt and pepper and the chopped dill is added. Pour the sour cream on top, mixing it well. This composition is put in the oven for 10 minutes!

This recipe for spinach with sour cream has its origins in Transylvania where it is considered a miracle recipe because spinach provides vitamins and strength and sour cream provides calcium. Try this unique combination now!
